DAY 1 - Arrival in Seville
  • 18:00: Optional welcome dinner for early arrivals at Bodeguita Romero, celebrated for its authentic Andalusian tapas. This relaxed setting allows participants to meet and interact on the eve of the retreat.
  • Accommodation: Overnight at Sercotel Las Casas de Los Mercaderes in the heart of Seville’s historic centre.

Day 2 - Seville to Jerez
  • 08:00 - 09:00: Breakfast at the hotel.
  • 10:00: Departure for Jerez by bus, enjoying the scenic views of Andalusia.
  • 11:30: Check-in at Hotel Bodega Tío Pepe, located within the renowned Gonzalez Byass winery.
  • 12:30: Lunch featuring local specialities at the hotel.
  • 14:00: Tour a renowned Gozalas Byass and tasting
  • 1500: Free Time
  • 19:00: Dinner at La Carboná, including a sherry pairing experience.
  • 21:00: Flamenco performance at Tabanco El Pasaje, offering a deep dive into Andalusian culture.
 
Day 3 – Whisky Talks and Tastings
  • 07:00 - 09:00: Breakfast at the hotel.
  • 10:00: Visit to a local cooperage to see the art of barrel making, crucial for both sherry and whisky.
  • 12:00: Return to the hotel for lunch and some leisure time.
  • 13:30: First session of whisky talks focusing on the role of sherry casks in whisky maturation.
  • 18:00: Seafood dinner at Casa Bigote in Sanlúcar de Barrameda, with picturesque views of the estuary.
  • 20:30: Return to the hotel.
 
Day 4 - Whisky Enlightenment and Culmination
  • 08:00 - 09:00: Breakfast at the hotel.
  • 09:30: Continuation of whisky talks, covering advanced blending techniques and sensory evaluation of sherry-influenced whiskies.
  • 12:00: Hands-on blending workshop where participants create their own sherry/whisky blends.
  • 13:30: Lunch at the hotel.
  • 15:00: Cultural session with a local historian on the impact of sherry production, followed by a Q&A.
  • 19:00: Farewell dinner at Restaurante A Mar, showcasing Andalusian cuisine paired with local sherries and whiskies.
  • 22:00: Closing ceremony, celebrating the retreat's achievements and presenting certificates for the blending workshop.
 
Day 5- Departures
  • 08:00 - 09:00: Final breakfast and check-out.

  • 10:00: Departure by bus back to Seville in time for afternoon flights or extensions.
